I used to make this when my kids were as small as the cost of a frying chicken. When I recently took out a loan to buy one frying chicken, this easy recipe came to mind. It’s very, very tasty - and effortless!
1 frying chicken, cut into parts
1/2 tsp. seasoning salt
2 tsp. freshly ground pepper
1-1/2 c. mashed potato flakes
Preheat oven to 375 deg. F. Roll chicken in melted margarine and seasonings. Shake in plastic bag containing dried potato flakes. Transfer coated chicken to parchment-covered baking sheet. Bake in a single layer, uncovered, 45-to-60 min. Yields 4-to-6 servings.
