Potato-Crusted Chicken

It’s fast! It’s easy! It’s fabulous! If you’re wondering what to make for dinner tonight, try my Potato-Crusted Chicken! Once you’ve had this dish, you’ll want to make it over and over, Dollinks! 

Potato-Crusted Chicken: 
½ c. margarine
½ tsp. seasoning salt
2 tsp. seasoned pepper
8 - 10 chicken thighs, skinned
1-½ c. instant mashed potato flakes, unreconstituted
Preheat oven to 375 deg. F. Melt margarine, stirring in seasonings. Dip chicken into margarine and then into instant potato flakes. Resist the temptation to drizzle any remaining margarine or butter over coated chicken pieces or the chicken will burn.  Bake, uncovered, on parchment-covered cookie sheet 45-to-60 min.


Coat chicken with potato flakes.


Ready to serve!
