Chilled Lava Froth


Readers in the Southern Hemisphere will enjoy this refreshing holiday drink! It uses fresh mint: If there’s none in the garden, you’ll find it among the many small packages of fresh herbs at your local green-grocer’s. 

Non-Alcoholic Chilled Lava Froth:

3 c. crushed pineapple, drained
1 tbsp. chopped fresh mint
1-½ c. whole milk
1-½ c. vanilla ice cream, slightly softened
½ tsp. almond extract

Blenderize pineapple and mint until finely chopped. Add remaining ingredients, blenderizing until frothy. Garnish with a sprig of mint. Serves 6 in martini glasses.
