Ron’s Spicy Squid

I stared at the squid. The squid stared at me - or would have, if he’d kept his head. I stared at Ron. The squid stared at Ron. I won: Ron did the cooking. It really was “no contest.” If, like me, you’ve never cooked squid before, I’ve provided plenty of photos to illustrate each simple step. Thanks to Ron, I now know how to make it - and so will you! Need I say this dish was delicious, Dollinks? From start to finish, Ron’s recipe took just 10 min.
Ron’s Spicy Squid:
1 chunk of squid, approximately 6 x 4 in.
1 egg, well beaten
⅓ c. flour
Salt and coarsely ground pepper, to taste
3 tbsp. canola oil
3 cloves garlic, chopped
2 tbsp. chili-lime flavored hot sauce
½ bunch green onions, chopped
1 fresh lemon (optional)
Rinse hollow tube of squid inside and out under cold, running water. Slice down each side of squid tube to produce two flat pieces. Blot both sides dry with paper towel. Slice each piece horizontally into ½-inch strips. Dip pieces into beaten egg and then into flour seasoned with salt and pepper, coating well. Heat oil in a medium skillet on medium heat. Stir in garlic about 1 min. Add flour-coated slices of squid, browning 30 sec. on each side. Shake hot sauce over cooked squid in pan. Add green onions, stir-frying 1 min. more. Serve hot, with a squeeze of fresh lemon. Serves 2 as an appetizer, or 1 as a main dish. 
Note: Standard supermarkets don't sell squid. Ron buys his at a large Chinese supermarket chain.

Rinse the tube of squid inside and out

Slice tube into two flat pieces

Chop garlic and green onions

Trim squid into 1/2-in. slices

Dip into well-beaten egg; coat with seasoned flour

Heat oil in medium skillet over medium temperature

Grab the chili-lime hot sauce ... Any brand will do!

Start to fry garlic ... Our kitchen smelled divine!

Quick-fry floured squid

Pour on a little hot sauce

Fry squid until golden brown; add diced green onions

Serve as an appetizer for 2 or a main dish for 1
