Carrot Salad with Basil Mayonnaise

You’re going to love this outstanding summer salad! It’s easy, quick, and - economical - especially if you’ve got fresh basil begging to be used.

Carrot Salad with Basil Mayonnaise:


To Prepare the Salad: 


4 large carrots, grated

4 very thinly sliced green onions (see Note)

2 tbsp. fresh rosemary, chopped (optional)

¼ c. uncooked frozen peas


Combine above ingredients, tossing well. Serves 4.


To Prepare the Basil Mayonnaise:


1 c. mayonnaise

¼ c. fresh basil leaves (no stems)

½ tsp. dried lemon zest

1 tbsp. lemon juice


Place dressing ingredients in a blender goblet, whirring at high speed until smooth.


Note: I wanted the “zing!” of green onions, but didn’t want their taste to overpower this salad. The grater disc of my food processor quickly achieved the ultra-thin slices I sought. The same grater disc made quick work of the carrots.
