Non-Alcoholic Lime Cooler Punch

This scrumptious punch requires two sherbets. I’m publishing it as fair dinkum for the barbie, with my Southern Hemisphere Dollinks in mind! Buy the sherbets now, so you’ll have them on hand when you need them, Possums!


Non-Alcoholic Lime Cooler Punch:
2 c. bottled lime juice
½ c. granulated sugar
2 qt. (2 L) sparkling water or club soda, divided
Juice of 1 lime
2 c. lime sherbet, slightly softened
2 c. pineapple sherbet, slightly softened
12 ice cubes
1 fresh lime, sliced as garnish
Blenderize bottled lime juice and sugar at high speed until sugar is fully dissolved. Add 1 qt. of sparkling water and juice of 1 lime. Blenderize on low. Pour into punch bowl and add remaining sparkling water. As guests arrive, stir in the softened lime and pineapple sherbets. Add a dozen ice cubes and float slices of lime in the punch, as garnish. Makes 24 punch-cup size servings.
