Dairy-Free Summer Smoothie

As summer dwindles to its final days in the Time Zone and at the Latitude Where I Live, the produce markets remain crowded with the last of summer’s fruits. Finding ourselves with a little too much of the summer bounty, I whipped up this nutritious drink in less than two minutes.

Dairy-Free Summer Smoothie:

2 ripe bananas, peeled and chunked
4 slices ripe cantaloupe (“rockmelon”), peeled and chunked
2 ripe apricots, unpeeled, pitted and halved
¼ c. orange juice
2 tbsp. raw sugar (“turbinado” sugar), optional

Place all ingredients in blender goblet. Purée at high speed until no lumps remain. Serves 2.
