Summer-Fresh Lime Vinaigrette:
⅓ c. olive oil
¼ tsp. coarsely ground pepper
¼ tsp. chili flakes
Finely grated rind and juice of 1 medium lime (see Note)
Combine in bottle, shaking well. Pour over salad and serve at once.

Note: As illustrated, I always use a handheld fine-grate Microplane grater for orange, lemon, and lime rinds. Microplane guarantees the blade’s sharpness for life! This helpful gadget cost me less than $20. It’s one of my favorite kitchen tools.
