Cherry Cream Cheese Bites:
1 8-oz. (250 g) pkg. brick-style cream cheese, softened
⅓ c. icing sugar
Dash of salt
1 tbsp. granulated sugar
19 oz. (540 mL) can crushed pineapple, well drained
1 tbsp. juice from maraschino cherries
20 maraschino cherries, coarsely chopped, drained
1 c. mini-marshmallows
2 c. sweetened, long-grain coconut
Combine well and chill all ingredients except 1 c. of the coconut. Roll into 1-in. balls, chilling further. Using two spoons, roll chilled balls in remaining coconut. Serve semi-frozen.
