Firehouse Prawns

Some like it hot - but not too hot! When I felt like doing something different with the prawns we had for dinner the other night, I added a flavor kick. Here’s my simple - and simply delicious - recipe!
Firehouse Prawns:
20 raw prawns (fresh or frozen) 
3 tbsp. butter
½ tsp. lemon juice
1 tbsp. Cajun spice mix
4 drops hot sauce
⅛ tsp.  dried chili flakes
Shell and devein shrimp. Thread on wooden skewers for faster flipping onto second side. Preheat electric or stove-top grill to 375 deg. F. Combine butter, lemon juice, Cajun spice mix, hot sauce, and chili flakes in heat-proof measuring cup. Microwave on high about 15 sec., brushing sauce over both sides of skewered prawns. Lay prawns on hot grill, turning after 30 to 40 sec. Cook on second side a further 30 sec. Serve immediately. Serves 2.

Cook fast! Turn once! Finito!
