Glazed Sweet Potatoes or Yams

This basic, simple microwave dish is always popular. As with the recipe that precedes it, it serves a smaller group. 
Glazed Sweet Potatoes or Yams:
4 yams or sweet potatoes, ½ lb. each, unpeeled 
½ c. firmly packed brown sugar
⅛ tsp. cinnamon
⅛ tsp. allspice
¼ c. butter or margarine
Candied or crystalized ginger, chopped finely as garnish (optional)
Scrub sweet potatoes, pricking with the tip of a sharp knife. Place on paper towel in microwave oven. Cook 18 min. at full power until soft. Cool before peeling. Slice and overlap in a 1-½-quart glass casserole. Combine brown sugar with spices, sprinkling evenly over sweet potatoes. Dot with butter. Cook, covered, 8 min., spooning glaze over potatoes twice during that time. Serves 6 to 8. 

To Make Ahead: Prepare, cover, and refrigerate this dish the day before you need it. Warm it to room temperature before reheating it, covered, 3-to-5 min. at full power in the microwave.
Note: Don’t try microwaving more than four yams or sweet potatoes at a time, and be sure each is approximately the same weight. To double this recipe for a larger crowd, I suggest you peel, slice, and steam the yams, covering them with sugar mixture and butter. Bake, covered, in conventional oven at 350 deg. F. for 20 min.
