Avocado Salad Dressing:
1 small ripe avocado, peeled and pitted
½ c. mayonnaise
¼ c. chopped green onions
½ tsp. minced garlic
2 tbsp. lemon juice
2 tbsp. olive oil
5 tbsp. water
⅓ c. finely chopped parsley (no stems)
Combine all ingredients except parley in regular blender or hand blender., pureeing until smooth Pour over salad greens. Sprinkle parsley around edges of plate as garnish. Serves 6.
