All-Purpose Barbecue Rub:
1/4 c. (60 mL) coarse salt
1/4 c. (60 mL) dark brown sugar
1/4 c. (60 mL) sweet (regular) paprika (not the smoked type)
2 tbsp. (30 mL) freshly ground pepper
Combine all ingredients, dating and storing in an airtight jar away from heat and light. Use within six months.
Note: For a spicier rub, add 1 tsp. cayenne powder.
